Warranty problems

So, the problem is that my friend's phone started having WLAN connection issues, and in the warranty service they said that the phone was rooted, that she didn't do. We heard some time ago that the store it was bought from sells used phones as new ones, so it was probably the previous user who did it. Is there a way we can see the date and time the phone was rooted? Or anything else that we can do to prove that someone else did it?

As @funkylogik stated, you really can't prove someone else rooted it.
You state that KNOX is "0".....is it perhaps "0x0" or "0x1"?
Also, I believe that is the Note 2 is it not?

If the Knox counter is 0x0, you have a Note that hasn't been "officially" rooted. There may be an app called Safestrap (or equivalent) that creates a virtual system on the SD card... which you CAN root and ROM, leaving the phone's operating system and bootloader intact, isolated and just sitting there in the background. The ROM will operate from a partition on the SD card. The open padlock will appear on the screen at boot, because you're in the virtual system and it's - of course - rooted. If there is no padlock (or it's masked with an Xposed module), no root. You said the padlock is there, and the word "custom" is present.

If the phone's system was rooted (or root was attempted), the Knox counter would trip to 0x1 and that's it.

You stated your Knox counter is at 0x0. That means the phone's system has not experienced a root attempt. Look for an app called Superuser and another called Safestrap (or something with "strap" in it). If you DO, it's an easy process to switch to the phone's unrooted system OS and unroot/uninstall everything else.
