Rooting is absolutely worth it, imho.

Nova Launcher (ICS launcher - the search bar and + some features I was spoiled with having from Launcher Pro on my Droid X)

Airdroid (connect to PC via wifi)

NFC Task launcher (buy some NFC tags and set up profiles and toggles etc)

Gentle Alarm (my favorite alarm app - set up profiles, pre-alarm to wake gently, etc)

Simple Text (icons) and Minimalist Text (widgets)

Agenda Widget (synced to Google Calendar)

If you just root, without custom recovery or custom ROMs, you can get OTA updates, but you will have to re root after.

With custom recovery and custom ROMs, you don't get official updates, however 99% of the time, the devs have an update ready to flash right behind the official update, even sometimes before.

Definitely check out nova launcher. It maintains stock ICS for the most part with many additional settings available. there is a thread on nova with the link to the download (it's not in the market). Also you do not need to be rooted for it
