What are these information's in attached picture?

Like TUV Austria, S0417 or 50417, Ok biobased and on some phone IMEI and SN etc?

And are all Samsung Galaxy Note 20 Ultra models have same these info like TUV Austria, S0417 or 50417, Ok biobased and on some phone IMEI and SN etc?

And are these information's relate with privacy I mean we should not share with anyone and if relate to privacy then why?

I think the stuff in that picture is completely different to information like the IMEI, though I've never seen anything quite like this on a phone. TUV seem to be an Austrian company who provide a range of products and services, so that may be telling you nothing more than that they made the plastic film on the back. I think it is almost certain that "OK biobased" is just supposed to mean that the plastic film is biodegradeable.

The IMEI is different: that uniquely identifies a particular handset, and is generally not a good idea to broadcast openly on the web. One reason is that when a phone is stolen (which includes people who bought a subsidised phone on a conract deciding not to pay the monthly charges) the IMEI will be "blacklisted", resulting in the phone no longer connecting to a network. One trick a criminal(*) will try to work around this is to change the IMEI, which has to be to another valid IMEI. And if they copy yours there is a risk that your phone will end up blacklisted too (e.g. if they connect to the same network as you at the same time the duplicate IMEIs will be detected, which is likely to result in blacklisting).

(*) It depends on which country you are in, but in mine it's specifically illegal to modify the IMEI, and hence anyone doing it is by definition a criminal.

And if someone get our IMEI and Serial No and can they access our mobile data, Mobile activities what we are doing on our mobile?

Not sure on the s0417 number might be something with TUV specifically.....it has nothing to do with samsung.

Neither Serial Number nor IMEI allows the phone to be hacked, either separately or together. They may be of interest to scammers, and as I mentioned could indirectly have consequences for you (e.g. if this results in your IMEI being blacklisted), but there is no magic backdoor where someone who knows your true name IMEI can take control of you your phone.

Of course if someone had access to your carrier's systems and knows your IMEI they could monitor your approximate location (the phone uses the IMEI to identify itself to the carrier when it connects - this is how a phone can be blacklisted). But that's like saying that if someone has access to your carrier's systems they can see who you call and when, who you send SMS to: of course they can, because all of that comes through their systems. But that's nothing to do with hacking your phone. If you are worried about that, making sure your Google account is secure is the most important thing, because that's the easiest way for anyone to get into your phone.
