Root What can I do

Just got phone. System 9.20.1. Android 4.1.2. Can I still root? Unlock bootloader?

Head over to droidrzr and root, unlock boot loader, get twrp or cwm, and get at those ROMs.

Not really sure what just rooting would do for me though. I already have plenty of storage so I'm not really worried about the bloatware taking up space. Would I notice any significant performance enhancements?
The only thing I can really think of that I would benefit from is getting rid of the ads with adfree.

Agreed. I wish I unlocked back when I could have but I'll be selling this phone soon so no sense in rooting now.

You can disable builtin apps without rooting. Settings -> Apps -> All -> Uninstall updates -> Disable
