What does this update include as I cant see anything different???

HD camera for me! 
... not seeing an increase in speed or batt time booo!
for a 1 Ghz phone it sure does stall or freeze up between sliding home screens back and forth sometimes. darn

You get more apps available and livewallpapers are quite good.
I thought it sped my phone up a bit but I think it was just because of a fresh install, it's a bit laggy now. I think it's because of all the Sony crap on it (timescape, mediascape) which we won't get rid of until custom roms come out (basically hacked versions of the OS)

Whether 2.1 is better is certainly debateable but as to not noticing a difference...i'm not sure I understand. The lock screen swipe is different. The messaging app is totally different. The phone behaves differently froma visual standpoint, 5 homescreens instead of 3, the phonebook is organized differently... the list of visual changes goes on and on... if you were at 1.6 I don't understand how you couldn't notice a change, i suppose unless you use a custom app for absolutely everything

Lock screen - still works with circular swipe
Messaging app - always used Handcent so no difference
5 screens - had 7 for months with ADW.Launcher
Phone book - never use really so once set up not a biggy, I use Gesture Search to find numbers to ring.
So yeah, I am an app happy kind of girl so not much left other than the menus are Sony stock and haven't been for quite some time
The day to day use of my phone has not changed one little bit. The only thing is what Loch said on post # 4, the full game of Angry Birds means I have to boot my son off the phone on a regular basis!

If you mean HD Video I already had that with the update to 2.1.
Basically my phone said there was a updatee available so I updated it and now I have 2.1 update1. I cant see any difference from 2.1. Wonder if it was just Vodafone sending out another update? Weird LOL
When I updated through SEUS, it went directly from 1.6 to 2.1 update 1, I haven't realize there was one before that.

OMG 2.1 update is completely different i LOVE it ,,amazing +2Xfaster than 1.6 !!!
I think when Vodafone released it first it had some bugs so I think it's just a fix
Glad you found it faster, how long have you had it? For me it seemed fast at first but now it's got slower

Well.. Is upgrading an issue just to me?? I just followed the steps in the suite after connecting my mobile to the computer.. It asked me to switch it off and on after 5 secs holding the back key.. Then it showed as "updated" in the suite once I restarted the phone. It said that restart might take time but for me it was so quick and as expected, it was not upgraded! I am still with 1.6 
Please guide...

The first question is where are you and what carrier are you on? The upgrade hasn't been released by some carriers yet so it may be that you are one of them.
The Sony Ericsson Update Service seems more successful in some cases and also starting your PC in safe mode with networking and running SEUS from there often works.
