AOSP = Android Open Source Project, i.e. android without any manufacturer additions. The launcher is the app that produces your desktops and the app drawer. So the AOSP launcher is the launcher which comes by default with the AOSP.
I guess the obvious difference is that it won't have the Google Now integration.
Go to your current launcher in settings, applications and "clear defaults" , then when you hit "home" you should be given the choice of which launcher you want to use
