For example, Facebook often asks me if I would like their app but I have had no problems accessing the FB site without the app. Same for many other sites, news, weather, etc. Am I missing something?

1-click to open, and integration. For example, if you have the Facebook app, you can share your photos from the gallery to Facebook easily. Also it can alert you if you have new Facebook messages or notifications. And its faster than the mobile website and can let you view photos in full screen.

Tapatalk is another one. It's not really about having problems accessing something, just makes it more user friendly. Dare I say, dumbs things down, like iOS. Normally I dislike the way iOS dumbs down the UI but for specific apps where you're doing something simple anyway, like browsing a forum, a mobile specific site or widget is good. Sometimes I'll forget tapatalk & go to the browser. It's just a psychological thing; the better one will win eventually.

I think that also works in the mobile site. Facebook uploaded all my contact data even before I had an Android, and I didn't have a Facebook app on Symbian then.

No, haven't tried it but most likely now I will. Was a bit paranoid about agreeing to all the permissions apparently most apps require. To sheep or not to sheep.
If you have got a rooted phone you can use something like LBE Privacy Guard to have a lot more control over permissions. I've been using it for a while and feel much comfortabler with it - each time you install a new app it lets you re-configure it's permissions before starting using it.

Some people like vanilla icecream and can't see the point in even trying another flavour as vanilla satisfies their needs. Some would argue you miss out with that approach ....others would say you don't miss what you've never had. Same with apps really.....nice thing about Android is you don't have to 'sheep' as you put it...your phone and your use of it can be as individual or not as you want.
