What the heck is a ROM or a flash image?

I am a newbie to rooting. Just rooted my Droid Eris tonight and installed 2.1 on it, and I keep hearing people talking about flash images, and custom ROMs but I can't find info anywhere explaining this crap! Little help???
 
There is a whole forum in here just for rooting. Did you try and search? Ill give you a hint, its at the top of this forum.
