What's for dinner ?

Making some savory bread pudding with bacon, brussel sprouts, cheese and onions tonight. Using brioche from work (great stuff). Small salad on the side. :)
 
Making a big batch of tuna casserole. Part is going to another family in my congregation (new baby and Mom's recovering from a C-section), part will wind up in my fridge for consumption in the next few days.

Enchilada casserole tomorrow (dinner guests).
 
Thought I would have something Chinese for a change.

Spicy beef noodles, cucumber and beer.

Home made chicken & vegetable soup with home-made seed & grain bread still warm from the oven with butter just melting into it.
 
Making Chili dogs .. (But I'm having veggie chili on a hot dog bun .. )
If that doesn't cut it..:/ at least ill still have the cheese fries :0
 
I still plan something involving meat. After all, animals eat each other, why shouldn't humans indulge? :) (Besides, my favorite fuzzy carnivore would disapprove of a no-meat day and might well conclude she needs to give her humans hunting lessons (grin).)
 
Jambalaya with Turkey sausage and mixed peppers. It's still cooking!

Fresh potato mash with kale with bacon and smoked sausage. Oh and mustard.
 
Quiche aka Da Calory Bomb!
Leek or broccoli, 7 sheets of puff paste, bacon or lil pieces of salami, cashew nuts (unsalted or rinsed), pineapple cubes from a can, breadcrumbs.

Pie form in oven with some butter paste
Lay out the puff pastry to soften
Bake the bacon pieces
Cover the form with the pastry sheets (bottom and sides)

For the sauce: butter, yellow cheese (I use medium old Gouda cheese), flour, pepper, a little salt, milk, 2 eggs
- 50 grams butter (or more / less as desired) gently melted,
- Flour (yarned)
- Little milk and / or broth of leeks there
- Cheese cubes in there (3 cm thick slice of a piece of cheese, no idea how many grams)
- Stir in the thick sauce to melt the cheese
- Until the cheese is well incorporated (plain mush) further dilute with milk continue to stir until the correct thickness (continuous attention at this stage)
- Remove from the heat / the cooking
- Just before filling the form: add the eggs there and stir well. Eggs must solidify in the cake, not the saucepan

Little breadcrumbs, demi cooked leeks or broccoli, bacon, cashew nuts, pineapple in the form.
Pour over the cheese sauce + eggs.
Fold the remains of the puff pastry over the edges, on top.

15-20 minutes at 180 degrees Celsius in the oven.

Variation with broccoli there, fruits, other additional nuts/ without bacon for vegi version. Note: bacon & cheese are salty seasonings. Too much is not good, but without bacon soon miss the bite. And note: do not use fresh pineapple, because dairy is that bitter. Really, had to throw away a whole pie once. Fresh pineapple blanching first.
