Finished off the last of the oxtail stew.
Tomorrow is corned beef. It's one of the few things that my wife won't eat, but cooks it for me.
Don't jump on my case saying that corned beef and cabbage isn't Irish. I know, but I get to make some Reuben sandwiches with the leftovers. I win twice.

I'll be having corned beef and cabbage as well. We have the dish five or six times a year. I grew up thinking I was mostly Irish and my father insisted he have his corned beef and cabbage on St Patty's day. DNA shows I'm mostly Scottish.. so there ya go. :) I love the dish... it's like Cajun red beans and rice or mashed potatoes and gravy. Some foods have that perfect mate of flavors. I vote whoever doesn't like a good Reuben sandwich out of the club. :)
 
I'm having a fake Reuben sandwich for dinner along with some chips. I have almost enough corned beef for a sandwich. It's not enough to warrant the purchase of some sauerkraut, rye bread, and Russian dressing which I have zero. Instead, it will be a minimal amount of corned beef, Swiss cheese, mayo, on 7 coarse grain bread. Oh well.... The wife plans on having a self made chef salad.
