Went to my sister's tonight, we had blue apron fajita's and they where very excellent.
Catfish fry is slated for tonight's dinner. I will cut my fillets into fingers, dip them in a pancake batter spiced with Old Bay, roll the fingers in Panko crumbs and quick fry.
Wife needs to up her fiber intake according to her GI doctor, so we are wasting a perfectly good ribeye and having steak spinach salads

Had a package of build your own tortia and pork, was pretty excellent, I barely manage to finish my first one and meanwhile, my mother and her boyfriend really just had a few of them hehee..

I must say that the bison burgers turned out great. I had only eaten bison one time and it was from a concession stand. The impression that mustard covered hockey puck in a bun left had me never wanting to try bison again.
It's often for sale at my local market. I'll have to revisit it especially if it's on sale. Very tasty!

Finally had our NACHOS. They was good: and I'm sure there will be some joyful noise in the house tomorrow!
Beef and Bison meatloaf tonight and a vegetable medley. Tomorrow I'll have a meatloaf sandwich and some chips. And that will be the end of the gifted bison dang it. I liked it better than the wife but she didn't turn up her nose at it. She won't be asking for it however.

New plan... Carrabba's, I had a beautiful. steak and asparagus. The Boss Lady had two grilled pork chops and garlic mashed potatoes. We even bought home 2 pork chop entrees with asparagus for dinner later in the week.
Biggest meal I've had in a long time too.

Love Carrabba's. A little pricey, but totally worth it. Their mashed taters are incredible!!!
