What's for dinner ?

For some reason I had a real hankering for nachos... so I suggested it to the Darling Bride and she was all for it. This evening, that's what I made. You know it's a good set of nachos when your eyes are watering, your forehead is sweating and your nose is snottin' and runnin' all over the place - and this was a REALLY good set of nachos! I'm just braced for the inevitability in a day or two, when those nachos whisper, "remember how scorching I was going in? Well, grab hold of something 'cause you ain't see nothin' yet!"
 
Taco salad. Salad mix, browned ground beef with diced onions and chili seasoning, red kidney beans, hot salsa, shredded cheddar, and crunched up Dorito Nacho Cheese chips. If fixing it for more then two... a can of diced tomatoes and a can of sliced ripe olives is good. Would be nothing wrong with some avocado slices and or sour cream.
 
Long story, but the number 64 has popped up in my life more often than any number ought to... so in preparation to celebrate Birthday #64 next weekend, I'm planning Caprese Salad and Spaghetti Carbonara. Two incredible Italian dishes: since I met the woman who would become my Darling Bride while living in Italy, I find that most appropriate.

Dinner tonight will probably be heat & eat lasagna, since we have to wake up tomorrow morning at 3:30 for our VFW's monthly all-you-can-eat fundraiser breakfast. We're part of the opening crew who fires up everything and starts cooking well in advance of the doors opening.
 
Tonight I prepared my trial box of Slap Ya Mama Red Beans and Rice. It wasn't anything special. It cooked five minutes faster than the Tony Chachere's Creole Red Beans & Rice and I didn't have to add additional spice. Next up is to try Ben's take on the dish.
 
Tonight I plan to grill some hamburgers. I haven't decided if I want to cook them on the Blackstone or the Weber. I'll likely fix some potato salad.

Last night's trial of the Slap Ya Mama beans and rice somewhat upset my stomach. Considering the only plus to the box dinner was it cooked a bit faster and didn't need additional spice to make me happy has me doubting it was worth the extra money it cost.
 
I have become a big fan of Pho noodles, probably having them for lunch or dinner today

Tonight, if we eat anything at all, we'll have loaded baked potatoes. We're really not dinner people and would rather have a late lunch so all that food isn't sitting on our stomachs when we go to bed.
