What's for dinner ?

As planned, I made Caprese Salad for the three of us and paired it with Pinot Grigio. The presentation was perfect and the taste was incredible. The Darling Bride and former tax deduction son both complained that it was way too much food and they would never be able to eat it all. Thirty minutes later, three completely cleaned plates hit the sink. They couldn't leave any of it... mission accomplished!

Since yesterday's Caprese Salad didn't last long enough for a photo op, I'll post a photo of this evening's Spaghetti Carbonara. While the recipe in the northern parts of Italy (Milan, Florence, Venice) are a drier version, folks down in the Rome and Naples region enjoy a richer, creamier version... and that's what I prepare. Paired with parmesan-garlic bread and vino, I expect three more clean plates for the dishwasher this evening.

Update: three plates darn near licked clean!

Holy cow man, that sounds so delicious!

I fixed my third option for Cajun red beans and rice tonight. Ben's Red Beans & Rice has no Cajun on it but I know how to fix that. It cooks in the package in 90 seconds and isn't bad. I added some water to it, a half of a diced and zapped beef sausage, some cheese, and some Cajun seasoning and zapped it again for good measure. It's not as good as the discontinued Knorr Cajun Red Beans & Rice. However, total cook time was five and a half minutes. I have a bowl, a knife, and a spoon to wash. It was pretty good.

I dunno, @Milo Willamson - seems to me that if one types "Bro Shedda" in a search with SafeSearch turned OFF, there's no telling what's gonna show up...

UPDATE:

I was in a daring mood so I DID type that into a search with SafeSearch off. To my relief, the search results were images of Bruschetta :D

BTW it's actually pronounced "brew-sketta"

I had a repeat of last night's dinner... pulled pork and tater salad. I vac sealed and froze some of the meat last night and left a generous guess for tonight. I actually have enough to do something for one person. I'll have to check to see if the boss has something in mind or if I'm on my own for dinner tomorrow.
