Why choose Snapdragon 800 series phone over super mid-range Snapdragon 700 series phones?

I just saw the gameplay of Snapdragon 730 for heavy graphics games and it's was very smooth even on high settings, it may only run on 45-50 fps but it's hard to tell difference from "always" 60 fps of Snapdragon 855, plus the 730 is More power efficient than 855 because of weaker cpu. It seems that in day to day experience the Snapdragon 700 phones gives more satisfaction over SD 800, so why choose the flagship? It's more pricey and I heard flagships open apps faster but only less than 1 second faster. Maybe because of more advance camera feature, faster internet connection, and half second faster on opening apps?

what phones are we talking about here? some phone are built better for games and some are built better for performance regardless of chipset. sure the chip helps, but a newer chip is not always the best. it just depends.

Just FYI Snapdragon 855 is currently used in:
  1. Samsung Galaxy S10 series(China, Japan and US variants only)
  2. Samsung Galaxy Note 10 series(China, Japan and US variants only)
  3. Sony Xperia 1.
  4. OnePlus 7 Pro.
  5. Asus Zenfone 6.
  6. Xiaomi Mi 9.
  7. ZTE Axon 10 Pro.
  8. Oppo Reno 10x Zoom.
