I'm aware that the Wiimote has been incompatible with previous versions of sense. Can anyone verify whether or no the Wiimote can pair with the One X for things such as emulators?

Can confirm it, paired my Datel Retro Wireless with mine and used it in N64oid (one of the first things I tested). In terms of connection the Datel is the same as WiiMotes (it's made for the Wii). Others users at XDA have confirmed WiiMotes. I will have video up later this week to show it
