You can try 1280x720.

I tried to run a 1080p mp4 from my gopro camera and no luck I'll let you knew how the 960p and 720p ones turn out tomorrow...

1280x720 at 2Mbps bitrate and make sure the file is under 2GB

There are MANY threads on this already. Do a search for "handbrake". If you are just watching videos on the phone, use 800x480 resolution. Anything more than that will just be downscaled. If you plan on watching movies on a tv with the hdmi out, use 1280x720. I have found I can get to about 6000 bitrate before it starts to stutter.
