Sorry, once you've installed the OTA update, you've got it for good. If you want to root, you can either do this:

[ROOT][GUIDE] HBoot 2.02/2.10 SOFF - Root! The Final Frontier Edition - Upd. 12.21.10 - xda-developers

which has a few issues that come along with it, or wait until unrevoked gets an update. I recommend waiting for unrevoked unless you know exactly what you're doing.

Yep, there is no going back. the only way to remove it is to root.

Thanks, not what I wanted to hear...

Did unrevoked find a way to root HBOOT of 2.10.0001? I though that version was unrootable.

You can root now, but it's more complicated. Read the link I posted. Unrevoked, however, is working on an update; it just doesn't work with the current version.
