droid post-upgrade as an 'iTouch'?

Here's what I'm planning to do, will someone please tell me if I'm 'out in the rhubarb'?

My 2 year mark w/ my droid lets me upgrade (to which I'm planning to go to the Bionic) next week and I'd like to give the old phone to my 11 year old daughter.

My first question is this, after the current droid is 'out of contract/service' as my phone, could I set it up to work like an iTouch and allow her to use apps and possibly even set up a voip as long as she can hit a wifi spot? I know iTouch can work that way, just wondering if the Droid can too. That way she could really have a cell phone and I'd only have to pay what ever the voip charges are. I already know there are texting aps that work that way.

Can I do this or have I thought about this all wrong?

Yep, absolutely.

I have my wife's old Droid running CM6 on wifi only. I just use it as a media player and for web browsing. I don't use, but have tried VOIP on it and it works fine.

I put it in airplane mode and then enable wifi.
 
I'm kinda a newbie when it comes to some of this stuff... what does CM6 mean?

CyanogenMod version 6. It's a custom ROM for rooted phones.

Just to be clear, you can do this with a non-rooted standard Droid. In fact, I upgraded and have been trying to figure out what to do with my original Droid. Just earlier today, I was using it to listen to Pandora.

As stated, just go into airplane mode then turn wifi on. If you don't go into airplane mode first, it seems things don't work as well. I am sure someone can explain why, but use airplane and then wifi and you should be set.

Keep in mind, it is still a phone and 911 can be dialed. Not sure if 911 works during airplane mode, I do not plan to try it out!
 
I plan on doing the same next year. Could I root AFTER I retire it from Verizon service? So if it's not rooted now, is it possible to never root it until it's only usable on Wi-Fi?
