You cannot with the stock app, but you can install a replacement launcher (such as Go Launcher Ex, ADW, ADW EX, LauncherPro, Zeam). I'm not sure about all of them, but at least some of them allow you to specify or edit the number of homescreens. (Well, I know that Go, the ADWs, and LP do. I've never used Zeam.) I've never tried to set them to only one, but I am pretty sure that you can.

Or she can just leave four of them blank and keep any icons and widgets on the center home screen. If the screen is ever blank, you are just a press of the home button away from the center screen.
