Root best rom for 1st time rooter

hi guys im new to the forum and also new to rooting and roms. i have just rooted my phone by downgrading to froyo,unlocked and s-off (thanks to scotty85!!). im looking for the best and most stable rom i can find. let me give you info on what im looking for.
i had the incredible since launch day when it first came out. i was always happy with the way it worked including GB other than a few things.
1- all that verizon bloatware, need to be able to uninstall any program
2- all the ota updates, in particular the newest one that just came out about two months ago.
3- i would like to be able to tether via bluetoth,wifi or by wire with my nexus 7.
4-would like to not have to worry about that nagging"low on space" message
the most important thing about this new rom though would need to be how easy it is to use and flash and also i would like to not have to worry about it once it is installed and all setup.
is there a rom out there that might be able to do all this? i have been looking at the cyanogenmod 7.2
what do you guys think?

I'd personally go with cyanogen, was my favorite rom when using my inc.

Definitely does everything you ask for. I've never had a single issue with it. Highly customizable and stable. Has everything you could ask for in a ROM, As long as you don't mind losing the widgets and features of htc sense.

Your other option would be to download any other rom and modify the build.prop file to stop being nagged about the update.
