I'd say, going with Canon or Nikon, you'll be fine. Like others said, it's more about how much you want to spend. The other big thing is how does it feel in your hands. Unless you'll be using a tripod a lot (guessing you may with product shooting), spending that much money, it's got to be comfortable.

You will probably need tripod, lighting, good Macro lenses, soft box - and on the list goes.

Digital Photography Review is one. They have a forum for just about any camera
Photocamel isn't too bad either.
There are many others that are camera specific.

A RED perhaps. What about a Hasselblad or a view camera with a Leaf back or something like that?
You cant go wrong with one of Leica's digital offerings.
Be aware that optics are costly, so whatever your no limit price point is, keep in mind the cost of additional lenses can hamper you.
If price is no object, why limit yourself to a DSLR? Better ways to go if price is no object and you are interested in the best possible quality.

I started with a D3100 and then got a D7000, sold the 3100, love the 7k, but don't use it as much as I had thought/hoped I would. One of my many impulse temporary hobbies 
But it does great, and I've had a lot of fun with it.

What would be the difference between say your 7k and this model from Cannon?

Ya know, I'm not a super camera guru. I just did a LOT of research on DSLRs for beginners and by and large the consensus at the time was the D3100. I loved it and went to get a 4th or 5th lens for it and ended up messing with the D7k which just put it to shame. So, I got it.
I couldn't tell ya why so I guess I'm not a lot of help but, after lots of research between the rebel and the 3100, I decided the Nikon was the better fit for me. Then just moved up. Lens selection may have had something to do with it too, I don't quite recall.
But I really don't think you can go wrong with either - they are both highly approved cameras and as a beginner we may never know or care the real differences.
Accessories can be found for either.
Rob has the Rebel btw, so we have been known to bust on each other's pictures.

I upgraded from a Rebel to a 20D for one reason. The 20D has a small readout on the camera outside by the shutter button. I can see that more easily than the readout in the OVF.
I haven't really seen any reason to upgrade it, unless I want a 20Da.

Well, you did say price was not an issue.
I should think Cannon or Nikon offer cameras that will suit your needs.

I more or less meant we don't have a strict budget, but we don't need a $5,000 camera either, lol...

One word.. Nikon.
You can use the same lenses on more models of base than any other DSLR, they're relatively inexpensive. This means "flexibility". You'll be glad in a couple years when you want a new camera, but don't want to buy all new hardware.
