Eh, it's not looking too good. May need more of a manufacturer tech to fix it. He's looking more into it now though. Hopefully it doesn't take to long. I need to shower and leave for work in about 40min.

Loaf of bread from a bakery called Tartine in San Francisco. Never been as they opened after I left but I did have bread from Chad Robertson (owner) from his first bakery. Damn, was it good. I'm rereading his bread book to pick up some tips and refresh my memory on bread.

Yep, I do this every time I think about how many damn good bakeries are in the Bay Area and how few (read: zero) we have in our area.

Considering the required starting capital me think dread needs a solid biz plan. How large is your niche market? Spread your risks by having some large customers too (companies). But sure, it would be great to jump in soon, at the start of a growing economy.
