ninja edit: obviously, it'd only work on the homescreen
as far as I know, it's not entirely possible elsewhere

Decompile the apk and open AndroidManifest.xml
Search for a line that starts like this....
<application android:label="New Name Here"
Then compile and you know the rest.

Nova Launcher (May have to be paid version), now allows you to rename apps in the drawer as well!
