In an attempt to delete or uninstall apps, I go to Settings > Application Manager and am then presented with a list of installed apps. If I click on one of these I get the choice of 'Force Stop' or Uninstall Updates '. However, if I click on the latter, I get the message "All updates to this android system app will be uninstalled". If I go ahead with this, will the app eg Google Music, for all intents and purposes be totally inactive?

Yeah all you'll do is put it in the state it was when you bought the phone but you'll free up some storage then, as Chan said you should tap "disable" and it will virtually be gone to you (but can be retrieved if you ever want it)

Apps with the "Uninstall Updates" option are usually system apps that cannot be fully uninstalled.
The "Disable" or "Turn Off" option will only be available after you have selected "Uninstall Updates" which as mentioned restores the original version of the app that came with the phone. If after doing so the Disable/Turn Off button is unavailable or grayed out it means that you are not able to do so, this will be the case with some system apps. The only way around this is to root the phone and use Titanium Backup to freeze/disable such apps.

Try uninstalling updates and see if "disable' appears in its place.
If not, Fox is right and you can only freeze or uninstall them with root :(

Will Google root and titanium backup but have the feeling I may have to give up on this one. Thanks for the replies guys.

These pre installed apps don't use up any user storage space anyway as long as you uninstall their updates so don't worry about that :thumbsupdroid:
(uninstalling them won't free up any useful storage for you)
