Help Update rooted N7

I came across an N7 that is rooted and needs to be updated. If I remember correctly, in order to apply the update, it needs to be "unrooted". What is the exact process I need to follow? It has SuperSU. Do I just need to go to settings and do a full unroot? If I do that and apply the update, is it easy enough to get root back?
 
Alternatively, if you aren't interested in keeping the device rooted, you can also flash the latest factory images:

This will completely wipe the device as new, but if you modify the flash-all.bat and erase the "-w", you can flash the images without wiping user data.


This can also be accomplished using wugfresh that @Jfalls63 mentioned, but if you prefer doing the flashing manually, everything you need can be found at the above link.
 
The easiest way to flash updated stock to me is to use the Nexus Root Tool Kit

If you are doing incremental updates OTA, FlashFire works without loosing root.

I've used wugfresh before, years ago. :) I'm downloading it now. I don't want to lose root (or prefer not to) so I'll go this route. The device is still 4.2.1 (yep, it's old). Where can I find the most recent build that will work on the N7?
