1. Will I loose all my data if I root my phone, and will I stop receiving updates through Kies?

2. What's the best method to do it?

You will not lose ANY data whatsoever.
You WILL stop receiving Kies updates. But this is not a bad thing, as it is VERY unreliable.

The best method to root by far is Chainfire's cf-root method
