You know it. They have to let developers put in keywords, so you can search on "keyboard" and "Swype" will still show up.
Swype will never show up no matter what you type in. On account of it not being on the market and all.

I'll be very generous and says there are no more than 300 apps I see talked about. There must be some great apps no one has ever heard of in that 30,000. What can we do to find more great apps?

It's partly up to the developers themselves. Naming your app something like "Xcalibur" with a description of "This is an app we made, let us know what you think" isn't going to be helpful to the search engine. However, I agree that Google could be doing more, especially given where their company's origins lie. Keywords would be a possibility, although they are wide open to abuse.
The single biggest thing Google can do to improve the Market is create a new category called "Themes/Skins/Add-ons", and remove it from the main search listings. It's ridiculously difficult to search for e.g. some of the home replacement apps, only to have to scroll through page after page of skins for it to find the actual app.
