In People select the person you want then menu/edit. Scroll down to the 'add' button. Select that, and one of your choices is Postal Address.

This functionality, to me, is lacking in Android. I am always looking up mailing addresses on my phone and frankly, they are often hard to see in Android. At least in 1.5. I've downloaded a free app (maybe it's a Tmobile thing?) called "Phone book" from the market place and use it if I want to look up a mailing address. Works well for that.
