Root After rooting?

If you unroot you can. Get z4root in the market to root. One click will do it, and you can also one click to unroot with it.

You can still get the update if you don't unroot your phone as long as you're running stock kernel. All rooting does is give you access to your root folder (kinda like jailbreaking an iphone) so you can tweak/remove/add files.

I used z4root and chose the perminant root. There were two options. Does this mean I will not be able to unroot?

I haven't used z4root, but I would expect it has an unroot option. Have you looked to see if that is the case?

Really, there's no reason to unroot short of having to take the phone back to T-Mobile. Leaving it rooted won't hurt anything. If all else fails you can use Odin to get the phone back to factory stock.
