Alternate UI questions

I'm just about set on getting a Captivate, but I want to know what my options are in terms of alternative UIs. Do I need to flash the ROM? And when an OTA update is pushed, do I get put back on Touchwiz? And what's a good alternative UI?

LauncherPro and ADW.Launcher are both some good ones available on the marketplace for free. To use them install them then click the home key and choose one. No rooting necessary.
