How does the trick work? I mean how does sticking a paperclip into two holes and then running code manage to unlock a radio? xD

This post is the closest I've found to a concise explanation, but if you really want to understand it you could start with this thread and the ones that are linked off it's OP. ;)

Note that there are some definitions in the second post of that hardware thread which clarify the purpose of some of those mysterious firmware files.

I THINK the paperclip/wire/whatever you used was basically to short out the security flag...but that's a pure guess based on what you're doing and the precautions you have to take in order to make sure you don't ground the wire.
