Root Android apps loaded on tablet, ???

I woul like to get info on all apps that are loaded on my tablet, that is those that i have load. Is there anyway I can find out?
The only way I can find out who the creatoe is by looking on google's playstore. For example, I have 2 apps and a widget for calendars. I want to delete
All except google calendar and cannot determine who are the google calendar app and/or widget. Any suggestions?

Is there a way to only accept certain accesses from an app before downloading, it seems to an all or nothing?

Or can we put passwords on certain files or directory? ?.

Hi. I got an app from Play Store called 'Android System Info 'and it shows all the apps and by tapping one one it gives lots of info. Sorry can't help with rest of your query. Good luck.
