I don't really watch series all that much. Only one that I finished was Full Metal Alchemist.

I usually just watch the movies. Akira is my favorite and I also like the movies meant for kids like Spirited Away and Princess Mononokee and My Neighbor Totoro

What I have watched in the past
DBZ
Gundam Wing
Cowboy Bebop
Outlaw Star
Fullmetal Alchemist

Watched more recently:
Death Note - amazing! My favorite
Kenshin
Bleach

Loved Furi Kuri and Cowboy Bebop back when I was into Anime.

for me, the best thing about Cowboy Bebop was the music - Yoko Kanno and the Seatbelts! Fantastic soundtrack, glorious tracks - definate toe tapper.

I've seen Ninja Scroll, Vampire Hunter D, Akira, Hellsing(original and ultimate), First season of Full Metal Alchemist, Death Note. I wish I knew a good place to watch some anime. Also, if you have any recomendations along the lines of what I've listed please let me know. I'm always looking for new shows to watch.

I love Miyazakis films - My Neighbour Totoro, Spirited Away, Howls Moving Castle, Laputa, Princess Mononoke

I'm just getting into other stuff, watched Blood: The Last Vampire last week and enjoyed it. I have Akira, Ghost in the Shell, Cowboy Bebop & Vampire Hunter D on my Lovefilm rentals list, but they never send them through :( They're all classed as waiting titles.

I haven't watched much since the bubble popped in like 2006...but Death Note is a work of art. Other series I enjoyed were Case Closed (Detective Conan), Trigun, One Piece, and a little FMA here and there.

I've watched a ton of anime. I don't remember a lot of it but a lot of the good ones have already been mentioned. It goes without saying that one should watch the original Japanese versions because many of the English dubs lose or butcher things in the translation. There are also some animes that are localized for the US that are heavily edited (4Kids! entertainment) so they can be sold to kids when they weren't really aimed at very young kids in the first place. Here are a few others that I really enjoyed:

Gungrave
Monster
Initial D
Berzerk

Ohh jeez... Too many to list, but some of my favs are (in no particular order):
-Record of Lodoss War (Both OVA and TV)
-E's otherwise
-Scrapped Princess
-DBZ
-Get Backers
-Samurai 7
-FMP (Both TV and Fumoffu OVA)
-Serial Experiments Lain (I like to think and shit that blows my mind... lol)
-Texanhozle(sp?)
-GitS (SAC and all movies)
-Love Hina
-Golden Boy
-Ninja Scroll
-Flame of Recca
-Gantz
-Hellsing (TV and Ultimate)
-Black Cat
-Black Lagoon
-Trigun
-Outlaw Star
-Initial D (All 4 stages)
List goes on and on.. Just some quick ones that popped into my head... lol

I watch a LOT of anime... I could never list them all..

Looking over others' lists I saw a few noteworthy ones that I forgot: Scryed and Death Note.

In the past i have seen

Basilisk
rorouni kenshin
macross
black lagoon
ergo proxy
claymore
mushishi
Cowboy bebop

and a bunch of studio ghibli films. Grave of the fireflies is my all time fave though.
I've seen more but those are what come to mind.

Did no one mention Neon Genesis Evangelion yet? They have started to remake it calling it Rebuild of Evangelion or something but I don't think the whole series is available yet so you have to stick with the original for now.

Fullmetal Alchemist was always my favorite anime of all time and am now currently watching the new version FMA Brotherhood which supposedly follows the storyline of the manga comic book more closely. I'm only like 1 episode in so I don't know if I will like it better yet.

I've never seen the anime of Great Teacher Onizuka but I did see the live action series and it was really enjoyable. They said it followed the anime very well so I'm sure that is a good one to try as well.

I've also been meaning to watch Beck for a long time too but haven't gotten around to it yet.

trigun(owned 2 box sets both now lost to the borrower bug)
cowboy bebop(have music from the soundtrack on my hero, best soundtrack ever as far as i know.)
Gunsword
though i wouldnt technically call it anime, avatar: the last airbender.
samurai champloo

shows i liked but never watched all the way through for one reason or another:

bleach
fullmetal alchemist
ruroni kenshin(sp?)

someone should formulate a checklist of all the shows mentioned here so they can be used as a recomendation list.(not just a long list of animes, to keep the quality up, just the ones people listed here that they liked, therefore it's reasonable to presume they would recomend.)
