Im guessing that when you answer your device a feature of the device is to turn of, thanks to the proximity sensor - when the screen of the device is close to certain objects (skin) the screen will turn of to prevent your face 'using' your deice

I admit it was pretty annoying when i was using HTC Sense, i think its something you've got to deal with, when ending a call either pull down the notification bar and tap the end call button or use your trackball

Have you checked your screen time out in the display section of settings?
Also check your phone settings, Phone>Settings and see if there's anything there relating to the proximity sensor. (Im not using the same ROM as you so i cant give you exact details)
