I always smoke at least two racks. After receiving such high praise for my give away leftovers to my daughter and boyfriend I'll be doing three or four racks next time. :) I like smoked ribs cold so leftovers are a welcomed snack. Giving my snack pack away made my daughter's day and that made me happy but dang.. I could sure eat a couple of ribs right now. :)

You have to have a fair size smoker to do most cooks @dontpanicbobby . It basically takes the same amount of pellets to smoke one rack or as many as you can pile on there. So, it's a no brainer to cook multiple racks while smoking them. I have an outlet in my neighbor that always buys a rack or two when I smoke ribs. He is a rib lover. I would have smoked more ribs yesterday but I bought the two remaining racks the butcher had.
 
Tomorrow I'm smoking a pork butt. I was going to do ribs again but a sale on pork shoulder changed my mind. I'm going to spice up my pork with some hot rub and plenty of it.... just like I like it. If someone wants to water it down with some sweet bbq so be it. I'm having my pulled pork spicy hot.
 
I spiced up my pork shoulder and let it rest over night in the fridge. I used mostly Ah $hit seasoning with a bit of Toker and jalapeno garlic salt. It went on the smoker at 7:45 this morning and it's starting to smell wonderful.

On another note... A year or so ago I tried to convert my Jenn-Air gas cooker into a charcoal grill without any success. I had purchased a huge cast iron lasagna pan to use as a bed for the charcoal and yesterday it finally crossed my mind that it was still in the gas grill. I should have brought it in when I abandoned the project but forgot about it. I brought it in last night and started to process of restoring the piece. It had some surface rust likely due to condensation and it had never been seasoned. I scoured the dish and gave it a generous coat of shortening then baked it for an hour at 200°. I'm getting ready to slow bake the fat cap I removed from the pork butt in dish. I don't know that I will ever use the lasagna pan but it is a nice dish just to toss.
 
I don't know what it might be used for. The dish is a beast. Here is a link to the dish on Amazon. It weighs a ton. :) I see I ordered it in August of 2019. Man time gets by.

I like that the lid doubles as a griddle. I may have to add another lally column under my kitchen cabinets if I keep buying more cast iron cookware. :p

I like your dish better than mine. Love that lid / griddle combo! I was just after something to put charcoal in for the Jenn-Air just had stainless ramps at the bottom to let the grease drip into a tray. I never considered cooking with it.
I don't remember mine costing as much as I see it now. I didn't remember when I bought it either lol. Your linked dish is far superior and at a better price. It's impossible to beat cast iron cookware. I'll likely cook up a roast and veggies as a virgin cook in my reclaimed dish.
 
I loved my pulled pork. It had a bite but wasn't too spicy. I pulled it and gave half to my daughter. She sent a text later that she thought it was wonderful. The wife and I made sandwiches with our half and will do so again tomorrow. It sure is good eating especially when you enjoy the smoking process.

I slow baked my fat cap in my lasagna pan most of the day. Once I cooled it off I wiped it down and put it up. Wife gave the big nod on a beef roast and veggies in the pan next week. It seasoned up nicely. Should make a great cooker.
 
I cooked a bit over six pounds of roast beef, five pounds of potatoes, and two pounds of baby carrots in the deep dish cast iron lasagna pan today. It was about half full. :) What a cooker! Now I'm left with the daunting task of putting the leftovers in the fridge. I gave a meal or two to my daughter and we'll replicate tonight's meal tomorrow. Then it's soup or stew with what's left. I can't see using the pan often. It is just way big for two people. I can see pressing it into service down at the river when I have a crowd of hungry folks to feed.
 
I have baby backs on the smoker today. I tried to buy a couple of racks a couple of days ago but they looked lousy and were high dollar.
I went to the store today for some brats or flanks steaks... something I could fire up the smoker for. To my surprise they had two racks that looked great and for some reason they were the only two marked down. Needless to say, I snapped them up and then scrambled to get them on the smoker. Crisp weather, football, perhaps a beer or two, and smoked baby back ribs is my idea of a perfect Sunday.
 
I'm doing beer can chicken on the Traeger, with Cous Cous and green beans on the side. I have Jamaican Jerk rub on the bird and a stick of butter between the skin and the meat. I'll go fire up the grill at halftime.

I haven't done beer butt in a long time. Sounds great! I'm just about ready for my last hour on my ribs. We be eating good tonight my friend!
 
I'm making a Costco run tomorrow. I hope to score some fresh caught cod and salmon, some ground beef, steaks of some sort, perhaps a loin I'll cut steaks from, and I'm going to get some lamb chops. I'll be getting some other goods while I'm there but mostly I need to resupply my freezer. It's still a shame that they quit selling ribeye cap steak.
 
I got some meat at Costco but not as much as I had intended. I grabbed a six pound package of 87% lean and divided it up into pound packages and vac sealed. I purchased both some fresh caught salmon and cod fillets. They had no prime steaks or loins only choice so I passed on that. I did buy a huge package of two inch thick pork chops which I separated into three meals plus and vac sealed. I almost bought some beef ribs but they didn't have that much meat and were priced high in my opinion. I left Costco without any lamb chops for they had none to offer this time. I think I'll cook out the last two prime ribeye steaks that I had left in the freezer tomorrow. That will leave just four pounds of ground beef of old stock to cook.
 
Tonight I cooked the ribeye steaks I mentioned above. They were purchased at Costco in early Dec. and have been in my freezer since. They were Prime and indeed they were prime. I marinated them in some Montreal steak seasoning, Allegro marinade, and beer for about three hours. I then smoked them at 225° until I saw 120° internal temp then brought them in. I immediately seared them in a skillet of butter and the left over marinade about 45 seconds a side and served. The steaks rivaled any steak I've eaten. Costco prime is genuine. The steaks were huge so for a side I cut up some sweet potato chunks, tossed them in avocado oil, and baked them for 45 minutes at 350°. It was a wonderful meal.

I see most of the recipes top with cheddar cheese, but I think I'll skip that step since my son peeled it all off of his and while I love cheesy dishes, I think I'd rather highlight the pork in this dish.

I'm curious as to how your pie turned out. I'm always looking for new dishes to consume the leftover pulled pork. Smothered burritos being my favorite so far. I'm fixing a pot of pinto beans today that will be chili by dinner time. Tomorrow I'll use my leftover pulled pork to make my burritos.
