Any Time is Grillin Time

Tonight I'm grilling out some chicken thighs. I plan to make half with a garlic based rub and the other with a hot rub finished with a bbq glaze.
Superbowl Sunday I had a desire to smoke something special. My local market was completely out of anything that looked special to me.
I settled for a flatiron steak that was over priced. I'll probably bake potatoes to go with it. We don't need a lot to eat because of the snacks I'm making for the big game.
My grocery store had jumbo wing on sale, so I grabbed about 12 pounds. I'm trying them three ways to compare. I'll prepare them all by sectioning them, drying with a paper towel, and coating with salt and pepper. 1/3 I will fry (in my new toy), 1/3 I will air fry, and 1/3 I will smoke then air fry. My family can then toss them with whatever their favorite flavor is.
 
Wings are always good. It's rare when I can buy them local but Costco is a reliable source. I like the new fryer! It is far more fryer than I ever owned. Mine was a go-to tool when the kids were living here. With just the two of us to feed, I put the toss on it a decade back. I miss the french fries and especially miss the fish fries of days past. Deep fried breaded cauliflower.... emmm!

I'm interested in the results of your cook test. I am a fan of smoked, grilled, and air fried but I don't have a sweet deep fryer. :) I don't like poultry smoked without putting a crisp on the skin be it grill or air fry.

Oops, missed this. Yes, my new one. I had one that I used camping with a turkey fryer that got lost over time. This one take up a bit more room, but is a little easier to use. I'm sure this summer I'll be butting up 10lb bags of potatoes and feeding the neighborhood. :D
 
That looks like a genuine tool as well. I have had cut countless pounds of potatoes over the years. I never owned a slicer... a couple of choppers but never a slicer. what a tool!
I've been air frying my fries. The wife eats very few so a basket is perfect for the two of us. Though good, they aren't deep fried. :)

Today I was at my local market buying this and that. Walking the meat counter I saw that St Louis ribs were marked down to $1.99 a pound. I was tempted but I have racks in my freezer. Naturally they are priced $4.99 a pound. Timing..... :(

I'll likely smoke a rack or two from freezer Saturday. I'm playing golf Sunday so Saturday will be my smoke day this weekend.
 
Went to Sprouts and saw that they had flat iron steaks. Never cooked them before, gonna put them on the grill tomorrow. Any tips? I don't need to do low and slow with these guys, correct? I can cook them to medium rare and be good, yes?

I grilled the first flatirons I bought and the result was not impressive. I slow cooked them from that point on and they became one of my favorite meats.
If I didn't have a smoker, I'd bake them at 250 and wrap them in foil when they reached 160 and call them done at 195. Maybe put a sear on them when they reached 185 with your grill. Your mileage may vary. I only grilled them once. I have smoked them too many times to count and love them. Tender and juicy with a rich flavor.
 
I made a Costco run today. I was needing more coffee beans and wanted to shop the meat counter. Two hundred dollars later... :)
One of the goodies I bought was two chuck roasts packed together priced at $5.49 per pound. Each weigh three pounds and looked very good. I vac sealed one for the freezer and smoking the other tomorrow. It's supposed to be beautiful tomorrow so I'm in for some kind of fun. I'll season it and smoke it at 225°, wrap it when I see 160° internal temp, and put it in the hotbox to rest when it reaches 195°. I anticipate a six hour cook and a hour rest.
 
Have you cooked your flatirons? I'm curious as to how you cooked them and how you liked them.
i did. i marinated the steak with some soy sauce, garlic, ginger, and some chili crisp(if you have note used this condiment, i highly recommend it.) and marinated the steak for 4 hours. i then lit the coals and just did a good sear on both sides, until it was medium rare. i then rested them and thinly cut them against the grain. it was perfect!!!!!!! very tender and juicy. most definitely going back to sprouts to get them again. its weird that wholefoods does not carry this cut.
 
Fantastic! Your cook proved to be legit. I'm glad you liked the steaks. They were once a really cheap cut. Once I found my preferred cook on them. I never looked back. The wife and I love the flavor of the meat. It tastes good enough to stand alone with just salt and pepper. I've used the steaks for fajitas, beef and noodles, hot beef sandwiches, soup, oriental beef and broccoli, you name it. It's so tender and tasty that it's great for ever dish you can imagine. I don't cook the steaks often anymore. It's not because of we got tired of the cut but because they are now priced ridiculously high compared to other cuts.

yeah i am definitely going to be cooking it some more in the near future. i have an idea for a grilled beef and broccoli dish. you par cook the broccoli(i actually like broccolini instead) and finish it on the grill and of course you grill the flat iron. cut both items and then you mix in your sauce.....might try this over the weekend.

Was there anything on the grilled carrots? Olive oil? Salt? Pepper?
yep....probably olive oil to make the curry powder and salt stick

mine will just be oil, salt and pepper, then ill combine that with the sauce, grilled broccolini and the steak.
