Any Time is Grillin Time

It's been so hot lately that we've been eating light. It's not supposed to be any cooler tomorrow but you can only eat so many sandwiches. :) Tomorrow I plan to fire up the Blackstone. I'm fixing bacon, eggs and pancakes. We never eat breakfast but we both enjoy the meal. Tomorrow it's breakfast for dinner. The large griddle surface makes the meal a real easy cook.

I've yet to cook potatoes on the griddle. Typing my breakfast plans brought hashbrowns to mind. I bet they would be excellent fried in a bit of bacon grease. Hmmm
 
I'm an egg lover as well. I don't like sweet breakfast. I cook sunny side up and or over as easy as possible and put those eggs on my breakfast. On my hashbrowns, grits, pancakes, buttered toast... I don't really care.. just give me some eggs.

my favorite is a sunny side up egg on top of a burger. i also will make a stir fry vegetables and top it with a fried egg.
 
This morning I picked the 27-ounce Cowboy Ribeye waiting for me at our local grocer's butcher. Great marbling. I'll start salting it tomorrow and have that beautiful chunk of cow ready to reverse sear Thursday. That will be enough to feed both of us, with tender leftovers for the next day or two. Nothing like ribeye sandwiches for lunch!
 
SUCKS!

I had this gorgeous thing salted overnight, wrapped in paper towel (to absorb that moisture) and sealed up in a vacuum canister. Brought them out to rest and come up to temperature. I saw a line of storms rolling east in Memphis and figured I'd better start early on this hour-long reverse sear to beat the rain. I have them marinated and everything and...

(insert sound of weather radio going off over the distant sound of thunder)

I looked at the radar again and thunderboomer cells were popping up all over the place!

😢😢😢

In a panic, I had to secure the grill, set that monster on a sheet of wax paper in the vacuum canister and hope it lasts another day (I picked it up Tuesday). No rain expected tomorrow, so I hope I can get this thing cooked and chomped on without resorting to the oven and a pan sear...

My wife and I both love the breakfast meal but we don't eat anything in the morning. I don't eat lunch either but my wife usually has a salad. If we want bacon and eggs.. we have to have it for dinner. I discovered years ago that my body does quite well with just one meal a day. But I still want my breakfast now and then.
 
I had fun on the griddle tonight. I fried up some burgers, grilled onions, and toasted buttered buns for bacon cheeseburgers.

Tomorrow I'm again cooking on the Blackstone. It's been a while and stir fry is calling our names. I'm thawing out a couple of vac sealed chicken breasts that I'll dice and fry. The veggies we bought at Costco a while back and divided it into three vac sealed portions for stir fries. We had the medley once and it's a great mixture. I'll serve over fried rice.
 
I thought I'd help you slobber a bit with the final result of my reverse sear Cowboy Ribeye. Check out this cow, cooked to a perfect medium. I could cut it with my fork!

During the "low & slow" part of the program (250-300 degrees), I had the steak on the top rack with a pan underneath. In the pan I had a stick of real dairy butter; two sprigs of fresh rosemary; and 3 or 4 cut cloves of fresh garlic. The butter melted and was infused with the rosemary & garlic: then I basted the steak regularly and generously with the butter. As the steak cooked, juices dripped into the pan and I put them right back on the steak.

During the rest (which took a LOT longer than I expected), I basted it some more until I was confident it was no longer "thirsty" but very moist. My diligence paid off!

It wasn't a fantastic steak but my stir fry was pretty darn good. I put the super clean on my Blackstone before the cook. I didn't want my stir fry to taste like bacon. :) It's not Xenforo's fault I haven't a pic to share. We dove into the meal like we hadn't eaten in a week. There was no time for a pic.
 
I griddled boneless skinless chicken thighs. My wife wanted her chicken just seasoned with the Colorado Chicken & Veg from the Spice Guy. I took a couple of thighs and diced them up and seasoned them with Williams Chili Seasoning. I used the chicken to make burritos for me. We were both happy.

My son was here over the weekend and was telling me that his company is sponsoring four of its employees for a bbq competition / fund raiser. He was selected as one of the chefs. Each cook is to prepare a meat in one of the four categories to be judged. I don't know what the four different meats are but my son volunteered to do pork butt. He had gone to the four local meat outlets in town and couldn't come up with pork shoulder that met his expectations. I told him that I had a price shoulder in the freezer that I bought a while back. He put it in my fridge and just came by to pick it up. It is a beauty and I hope my butt wins. :) The different meats to be judged can't be on the cooker before 8 AM and must be presented at 5 PM. It is his first cook competition and I hope he has fun.
 
My son just text me saying that his / my pork butt took first place. I don't know exactly what he served the judges. He talked about serving them medallions out of the multifidus dorsi muscle (the money muscle) and pull the remainder of the butt for the public. Whatever he served them earned him $110 prize money and bragging rights. Not a bad way to spend the day. Earn your day's wages while smoke meats and drinking beers and get a $110 dollar tip.
 
I talked with my son briefly after he got home from the big smoke out. He still didn't elaborate what the four cook categories were but there were 17 teams of four cooks each represented. I guess it's an annual fund raiser and draws a huge crowd. After the judging, it's an all you can eat for the price of entry and the revenue is donated to needy causes in the area. I'll find out more after this weekend when my son returns from a three day vacation. If the entry fee isn't too steep, maybe I can talk my buddies into putting together a team next year. It sounds like fun.
