Any Time is Grillin Time

I'll get that baby repaired. I'll have to order the parts. It's grill enough to repair... again. I will admit it has seen some better days. The channel in the back of the box that the orifice bars rest upon and that channels the flame from one to another is eroding badly. It hasn't many years left in it I'm afraid. It saddens me to see it's life nearing it's end. I'll not be spending big bucks for another propane grill.
The cheap one I have at the cabin works great. When it burns though... I'll toss it. I'm thinking that's the best way to go.

Nothing to report up here. Hope everyone is staying busy on the grill! Been mostly pork chops/steaks, brats and hot dogs for me. Once inawhile I get to throw a steak on.
 
Nothing wrong with that. I'm entertaining a group at the cabin this weekend. Including a couple that were good friends in high school that I haven't seen in many years. Will be doing my best impression of a grill master Saturday night and putting on a five star breakfast for the crowd Sunday. Should be a good time.
 
It was a great weekend. Grilled out burger and hot dogs and some German sausages. The sausages were delicious. Very strong brat taste on them and very lean. I almost over cooked them. The hot dogs were old fashioned dogs... huge... beef.. tasty... expensive lol... but hey, they were really good. Was feeding eleven. Next weekend will be a different story.

We are doing our big celebration next Sunday. Most of us have to work Tuesday making Monday a less than ideal day/night to party down. So far the head count is 23. Almost half of my eaters will be children. I think I'll do some pulled pork and some salads for those that like such and some standby hot dogs for the little guys. My gill down there is way short of space to be grilling for everyone. I'm taking Friday off so I'll smoke a couple of butts then. That will make my weekend go much smoother. I am thinking about doing one butt bagged up with some jalapenos and onions instead of brown sugar and apple juice. There is a number of us adults that like stuff hot and spicy... might be the time to try turning up the heat.

I enjoy cooking w/vinegar/dressings/etc... & Sauerbraten is one of my all-time favorites,I figured why not smoke it,so I Google searched & came up with the above link.
I may put my own tweaks in the brine,a little sweetness via honey or agave nectar & a splash of pomegranate/lime juice.
Of course,a generous dose of roasted garlic is in order.Yeah,a little deviation from a true Sauerbraten,but,I think it'll turn out OK.
 
I'm guessing any lean roast would work. Venison is so lean. Eye round or top round might be the ticket. Might work with a more fatty cut... always my favorite but trying to hold true to the recipe.... lean might be the way to go.

I don't mind straying from the OG specs,per se,especially for added flavor w/a bit of marbling/fat.
But,the base flavor,twang from the wine/vinegar marinade/sauce is what I'm aiming for.
I'd be cool w/some chicken/turkey thigh meat,may pick up a pound of that as well.........
 
Alrightee,got the ball rollin' today on the Smoked Sauerbraten expirement:
Decided on boneless beef ribs,about 4 lbs,the perfect meat/marbling ratio & they're already a tender cut as-is.
As for the recipe,I actually will be sticking closer to the typical script,most of the items I wanted to incorporate are in one recipe or another,just gotta drop by the local foo foo (fu fu)? grocery store tomorrow to get some Juniper Berries.
Otherwise,I'm all set to begin brining/marinating come Saturday.
Also picked up a boneless pork loin 1/2,for snackin'..........................

Add to that not being a slave to the grill. Pulled the ribs off and tossed the kabobs on the grill. They coooked in the time the ribs rested and were cut up. Everybody fed in one fell swoop instead of 2 hours of cooking burgers and dogs.
 
I run across that problem often at the cabin. "Oh, lets do something easy like burgers and dogs" Yeah right. Trying to cook a couple dozen burgers at once can be murder. Nobody wants a cold burger and nobody wants to wait for the second batch or third. So you toss everything on the grill at once and fight the inevitable fire and try to serve up a good burger that's not crispy lol.

The cheaper the pellet grills are getting the more I'm tempted to buy cheapie for down there. Good grief the fun that would be. The ability to smoke up some meats or just to grill without being a fire hazard would be fantastic.
 
We are having a smoke off for the family Fourth of July party as most of us have a smoke in some form. Since I tipped my hand serving ribs and kabobs on the smoker last weekend, I'm going to grab a nice 6-10# Prime Rib. Oh does the hickory add a nice flavor to that, plus the cut with a fork tenderness. I'll try and post pics if I have time.
 
I had the day off so after getting my lawns mowed, I headed for the cabin and put a mow on the place. A friend dropped in so I grilled up some burgers and fresh corn on the cob. I'm getting excited about this weekend. I'll be heading down there fairly early tomorrow and will be entertaining the masses until Monday. Burgers, dogs, brats, pulled pork, brisket and a bunch of sides are on the cook schedule.
The women will be doing breakfasts. Six dozen eggs and eight pounds of bacon along with sausage and sausage links will go great with the hash browns, tortillas, pancakes and the like. We will be eating good if nothing else.
 
So this is happening tomorrow. Rub is on, firing up the smoke in the AM.

My father in law is a butcher, does a nice trick. Trims the bone off the prime rib, but ties it on, so it gets the flavor from the bones, then just get them to the pooches by cutting the strings.
 
I did a powerful bunch of cooking/smoking/grilling this weekend. Man I had fun. Pulled pork was great. My brisket was too tender to slice.. basically it fell apart so it became pulled beef lol. They ate it anyway though I was disappointed. Burger, dogs and brats turned out great. Fun times...
 
There's a guy in a hay field building a boat. He came over and asked if I had any sturdy gopher wood. He thinks this is a good place to start collecting animals two by two. Maybe he will have a BBQ on the pool deck.
