Any Time is Grillin Time

Exciting information my friend, thanks. Google says I'm 13 miles from the nearest Whole Foods. I'm fairly certain that my wife has been to the store. I seem to recall her going there to buy some mumbo-jumbo thing she wanted to put in her health smoothie thing she makes. I will definitely check out their beef rib stock. :)

I was off work today and among the many tasks I had to catch up on, one was running to the market. I saw my butcher friend and told him about the possibility of getting some short ribs from Whole Foods. He told me if I was serious enough to drive clear across town for them, he'd see if he could get me some. duh, serious.. sheesh! He told me he thought he might could order them from a private vendor where he has an account. He figured they would not be cheap but he'd pass them along at his cost. I'll wait to see what he comes up with before I make the journey right through the heart of town in hopes Whole Foods has them.

On another note, I was needing pellets. As you know, Wally World quit selling the B&B pellets or whatever they were last fall. I've been burning Green Mountain pellets since and they aren't bad. They burn slow enough and if you buy enough at a time the price is decent. Anyway, my son informed me that Wally World is again selling pellets but a different brand. I bought two 20 pound bags of apple and a 30 pound of a mix of apple, cheery, and maple. The bags are marketed under the name Pit Boss. The 20 pounders were under ten bucks and the 30 was less than 14... around 45 cents a pound. My son smoked a pork butt last weekend with the pellets and thought they were great. We'll see. The price is excellent.

Another lead. I just went to BJ's, a regional version of Cosco or Sam's, and I saw some cut up in the meat counter. I asked if they had any cryopacs and scored at only $4.49 / lb. This is by far the lowest price I've found, and I don't mind the quantity as I'll seal a meal two racks for a later cook. The meat cutter was surprised I wanted them uncut, so maybe there is a lot of ignorance about them in the retail world.

I gave a quick net look and found the product but much more expensive than that found at WallyWorld. Maybe a special deal or another close out.. who knows but the price is sweet.
Talking to my son last night he said he used less than 2/3 hopper on an eight hours butt. Burn rate is not shabby either.

I will be close to Sams when I visit Whole foods. Neither are handy from my location. I have a Sams membership but not a Cosco. We don't have a BJ's but I'll give Sam's a look

I'm betting on Whole Foods being my source. My son said their meat counter is beyond excellent. He thought their prices were a bit on the high side but variety and quality was to be had from one end of their counter to the other.

I just called Whole Foods. They indeed have short ribs. The meat manager said they most always have them available frozen. :) I'm going to be cross town trackin. :)

Whole Foods up here had them for $9.99 / lb, so I jumped when I was able to get them for $4.49. Less than half the price. Good luck.

I just realized my son has a baseball game at 5. I guess I'll keep all 20# and smoke them up next weekend for Memorial Day. Good luck in your quest.
 
I've been smelling bbq's all day and you know what, I want one. I've got no garden in my flat though which kinda sucks. I suppose it saves on the gardening I guess :thinking:

Man that's a bummer. Nothing worse than smelling BBQ. I tell my mow clients that it's against my rules for them to BBQ while I'm mowing. The smell is a killer. I hope you can come up with something. No cooking out is just not right.

My quest is still not accomplished. Whole foods had beef back ribs suitable for soup or something. Very little meat if any. I then ran to Sam's club and found they had no racks of short ribs. The ribs they had were cross cut into slices that looked like bone in bacon or something. I have no idea what you could do with it. At least neither establishment was busy so we took our time and looked about. It made for an interesting afternoon.
 
^ Yeah I've thought of something but it never pans out. My flat's above a shop with a gated off courtyard so I could have the courtyard to myself. Random people will always walk through however many times I shut the gate though, someone always opens it again o_O

That is just baffling to me. It's a hunk of cow. It isn't like it is an ethnic or regional thing. I can find them pretty much anywhere around here for pretty short money, and you can't even find a decent rack to even try. I hope your butcher comes through for you, otherwise I'm going to figure out how to toss a rack in a foam cooler packed with dry ice and ship it your way.
 
^ should there be a lot of meat on ribs? Or was it little in comparison to other ribs? To be honest if I order ribs I'd expect a rack to be about a stakes worth but I wouldn't expect a rack of stake :)

I'll come up with a rack or two eventually. Both establishments confirmed that they did indeed sell short ribs. Whole Foods told me they have them often but were sold out. The butcher at Sam's told me they almost always put a few racks out on Friday. He showed me where they were and where they would be. He then tells me that they don't last long. I think to myself.. why not stock more... sheesh! And why would you cut across a rack of ribs? What could those slices be good for? I'm baffled. But as I said, they do sell them. It's just a matter of getting there when they have them.

Your offer was noble my friend. I'll get some short ribs here eventually.

Below was the first, last, and only other time I made beef short ribs. The pic doesn't do a good job of size. The plate they are on is about 15" (.33 meters??). 8 ribs and about 8 lbs precooked. That includes a lot of bone and fat. As you can see from the picture the meat retreated about an inch up each bone as they smoked, so there was a lot of fat reduction. So this is beef ribs, and a rack will be about 4 pounds of meat.

Baby back (pork) will be about 1 pound of meat per rack, while St. Louis ribs (less trimmed than baby back) are about 1.5 lbs per rack.

Damn. American ribs are a lot different to here in England. Order a rack of ribs in England it's pretty much each rib with not that much meat on them. It melts in your mouth though. Side note. What the Hell you feeding your cows? :D

I didn't get to post what my buddy grilled up this weekend because I don't think the main portion lasted more than 10 minutes after hitting the plate but it was burgers, brats from a local butcher, pork center cuts, and chicken breasts and he got them all timed perfectly except a little more on the burgers than needed according to my tastes. There was only 6 of us but we all descended on the food like a pack of hyenas without too many fingers lost. Probably being alcohol fueled by that point didn't help manners much but it was all delicious and accompanied by twice baked potatoes to boot
 
That sounds like a feast Zigman! I bet you had fun. That's a tough cook for your buddy. Just burgers and brats can be tricky.
Throw some poultry into the mix and he had to be at the top of his game. I love a variety like that but it's hard to accomplish. Kbobs
is my answer. They are a mess to prepare and warm up the hands trying to turn them but they are way good.
 
I grilled out some burgers tonight with some zip. I used some bacon and chipotle seasoning by McCormick. Nothing to rave about but was tasty and different.

I'm entertaining this weekend. I bought four racks of baby back ribs for one night. I think I'll do some bone out chicken thighs the other. Most of my guests are on a low or no carb diet so it's a bit tough for I'm a carb lover. I may do asparagus in a cheese sauce one night. Beyond a salad of some sort, I'm clueless what to make the other night. Breakfast is a challenge too. Toss out hash browns, pancakes, muffins, grits, and the like... what's left to go with a breakfast meat and eggs? I'm glad I'm active enough not to fret too much about diet.
