Any Time is Grillin Time

Next time I'll try making my own crust instead of the store bought kind.

I was in the store picking up some chicken thighs to grill tonight when my butcher buddy asked me if I wanted any more of the segmented beef short ribs. I told him they were way good but pricey. He then told me he was marking the remainder of what he had down... that's why he asked. I bought all he had at $3.49 a pound. I had to wait while he pulled them all from his chiller and relabeled them but hey... I can wait for a $3.00 a pound savings. I thought the wife might wince when she saw that I bought that many ribs but instead she said.. oh those look good. :)
 
I have smoked both beef and pork shoulder cuts. Beef is normally a chuck roast and pork shoulder is often called the butt. Both cuts turn out great if smoked slow and kept wet. If you were to grill them, I'd suggest coals on one side and meat on the other. Ideal cooking temp around 225°
 
I'm having turkey at my son's Thursday but responsible for the turkey at the cabin the weekend following. Have you tried to spatchcock a turkey @Unforgiven ? I'm considering giving it a try but sure don't want to ruin the bird for the multitude.

Nope, not yet. I spatchcocked that one chicken and it came out good. I want to experiment with that and injecting to hasten the cook. I'm going to experiment with $3-4 chickens some more before I try on a turkey. :D Even though I got this 18# bird for $7 on a stupid sale.
 
Now that is interesting... and looks fun. I assume the bird turned out as good as it looks. That's the biggest dutch oven I've ever seen. :)

I hope that your smoke today turns out great. Last year I smoked a twenty plus pounder and it turned out great. I haven't purchased my turkey yet for next weekend. I'm hoping to find an equal size bird for this year.
 
If anyone wants to try something different, you can try trash can turkey. My FIL and I cooked one a couple years ago and it was fantastic. He found the idea on youtube. We were giggling like school children when we first pulled the trash can off because we had no idea what we would find. :p

I've been reading up on the trash can oven. It's a must try cook! I wish I had an extension cord for my meat probe. :)
That seems to be the only problem with the cook. Having to break down the cooker to check meat temp. I'm still way pumped up about doing a pig in a trash can.
 
Well, the turkey is done way faster than I expected. I know brining will lessen the cook time, but 18# turkey in 4 1/2 hours. Sheesh, wrapped it up, stuffed it in a cooler and packed it with towels. I gotta keep it warm and moist for another 2 hours till my wife gets home from work. It looks and smells delicious though.

@Unforgiven I have a question for you. Have you used the Cave Tools app lately? I thought it odd the other day when I noticed the shortcut was no longer on the screen where I had it. I found the app in the tray and placed the shortcut back where it belonged. I went to open the app a bit ago to edit my spatchcock cook a bit and it wanted me to log into the app. I scrambled to find my login even though I couldn't remember ever logging in before. When I found no login info anywhere I entered my email and asked for a change password link. The app responded with there not being an account associated with my email address. I then created an account which refuses to marry with all of my saved cooks. I suspect an upgrade to the app put the thumb screws to me. What bothers me most is losing all of my cooks in my journal. I still have dozens of pics in a cave tool folder within my photo gallery. I was curious if the app has given you grief?

I've not used it, but I heard it was up for a major redesign. They asked me to help test a BBQ University and I was all in to do it until I found out I needed to sign up for facebook to participate. The app redesign was part of that.
