Any Time is Grillin Time

I've never smoked a burger. I have smoked meatloaf a number of times. Even burgers gain some smoke taste when grilled on my smoker. I grilled the burgers at 450° so they are on the grill 15 to 20 minutes depending on the girth of the burgers. I like em. :)
 
Over the weekend I had to opportunity to cook up eight pounds of sirloin steak. We were down at the cabin and one buddy said he was bringing the steaks and he wasn't lying. :) The steaks were beautiful! I cut them in half for they were huge. I marinated them for a few hours then smoked them. I finished them up with a sear on the gas grill.
Everyone stuffed themselves and there was steak left over. It will be a hard act to follow.
 
yesterday i grilled up some korean shortribs with my own sauce........so good. eating leftovers for dinner tonight as i grilled the entire costco package....now i have tons of grilled beeef....LOL
 
I like cooking a couple of meals when I'm smoking. The fuel cost is the same and it's great to have something ready to roll on another day.

I'm having a big bash at the cabin over the holiday. I'm thinking that I'll smoke out a pork butt and a couple of chickens. Everyone will bring side dishes which is always fun.
 
i, unfortunately, live in a state where the rates of infection and rates of hospitalizations have sky rocketed here in Cali (L.A.).....so i will not be entertaining this weekend alone with just me, my dog, and my mom.....i am headed to costco tomorrow to look for some nice thick ribeyes to grill for this weekend.
 
That is a bummer. It's fun to party around the smoker. The ribeyes sound great though. Have a great holiday
yeah well, did not get a chance to go to costco today. i'll try tomorrow, but i think my hopes of them having ribeye steaks will be dashed away.....BUT I WILL TRY ANYWAYS!!!!!!!

I smoked out some BB ribs last Sunday. Man they were good. I baked some beans on the smoker while the ribs were smoking. It was likely the best beans I've made to date. My traditional beans but I added an anaheim with my onions and bell peppers. Just the right amount of zip.

I'm contemplating doing a chuck roast or brisket point this coming weekend. I did get my poultry shears back from my son... I might spatchcock a chicken. Who knows what I'll find at a decent price? All I know is I'm already anxious for something smoked.
 
so i was lucky today, on my way home from work, i went to costco and found the very last ribeye. but these were not ribeye steak that you see at costco. this was the eye of the ribeye. they looked like filet mignon.....thick and round. i had to ask the costco meat guy and he told me that they are the eye of the ribeye. they were like $48 for 5 pieces. i bit the bullet and grabbed them. i just added a lot of salt and cracked pepper along with some fresh thyme and threw them on the grill. it was the best damn steak i had in a long time. they were so tender and juicy!!!!!!!!!!!!!!

This is my favorite ribeye cut. You will find that I have ranted and raved about this cut many times in this thread.
They are costly but absolutely wonderful. If this is what you bought, it is known as spinalis dorsi. Here is a Youtube of the money flap being removed and prepared.

sort of. they were about the same size. but from what the meat guy said. the ribeye caps consists of two parts. it is the eye of the ribeye and the fatty outer part of the steak. they then tie both together. the steaks i purchased did not have it all tied up like that. it was just one big, fat, juicy cut of steak. i have some that i did not use in the freezer. i think i am gonna thaw them out and grill them this weekend. i'll post a picture of them when they are thawed out. i hope they keep selling these cuz they are freakingly delicious!!!!!

as you can see there is no twine to tie the outer peice of meat from the ribeye. these are just the round piece of the steak.

i tried something different. i reversed seared these. i first light up the grill and cooked them at a temp of 275 or so until the internal temp was 90 F and then took them off the grill and used my cast iron on my stove top to sear them. it was even juicier then the first time i just grilled them.

right now i'm about to grab a glass of bourbon and smoke a cigar in my back yard.

edit: i think i will head out to costco tomorrow to see if they have this same cut, cuz damn they were tsasty.
 
I do believe it is the money muscle but it's separated from the rest of the ribeye and then sliced. I think I'm buying the same cut. What I'm buying is rolled, tied and then sliced. Either way, it is the best of the ribeye which is a great steak on it's own. Your steaks look amazing.
 
yeah these are not tied up. when i looked at the label it just said ribeye which made me do a double take. i had to ask the meat guy there to confirm that this is actually a rib eye and not something else. these are definitely different then the ribeye caps.
 
I know that you have eaten a ribeye that has that medallion on the end of the steak that is just wonderful. Butchering that medallion away from the rest of the roast before cutting into steaks is what we are buying... and LOVING. :)
 
I haven't cooked out all week. It's rare when I go that long without cooking something.. even if just a burger or dog.
Everything sounds good. I'll let the prices and cuts at the market decide what I'm smoking this weekend. I hope it's a brisket or chuck roast. We shall see...
 
i'm going to costco tomorrow morning (saturday).......anybody want me to pick you up something?

i'm gonna be looking for those ribeye caps or eyes again. maybe get some corn from there as well.
 
I'm jealous! I've have a couple of lawns to mow in town tomorrow then its off to the cabin to mow that property. There will be no Costco time for me tomorrow. I hope you can score up some more of that ribeye.

Speaking of those steaks... That reverse sear in the cast iron skillet takes on a whole new level if you save a bit of bacon drippings and sear those steaks in it.
