Root AOSP flavoring

Ive searched and searched and i havent found what im looking for. Now i know that our phone will never be 100% because of the proproetary software. Im curious about what falvoring such as gingerbread-house does to the source code that allows us to build aosp roms

Main reason its a major PITA for getting an AOSP build running is because the lack of support. And 2 because LG loves us so much they dont give us the full source code for the ally. for example. Lack of a boardconfig.mk which tells AOSP to compile specifically for the ally's board.

What would an aosp rom do and how would it be different from the roms we have now? And why wont they give it to us if we are already rooted what else are they afraid of? What we might acually enjoy the phone for more than its worth?
