Well, The Optimus M is rather one of the less powerful phones out, nevertheless, the only Android phone from MetroPCS. Now I'm not exactly new to Android, but I'm new to rooting and flashing custom ROMs. Is there even a such ROM that would work across multiple devices? Or a Miui ROM? Cyanogenmod ROM? Anything?

No, I think each ROM has different settings for carriers. Optimus S (Sprint) has a ROM. But if you flashed to it, it wouldn't work on Metro network. You would have to manually change various server settings. Plus if there's some hardware differences, then the S ROM would not work for the M.
