Because I gave it up long ago. I loved it but had issues with one of my teachers and it made me sour :-(

yes..

are you going to tell me something about them that will gross me out? please don't as I am a veg and they are one of my staples:)
I slice them into bite size disks and dip in chocolate...some i also dip in nuts and keep them in the freezer..to snack on ..love them with peanut butter too!

It's a means of preservation. You may have too many to eat at the time of harvest (mango, and many other trees, can bear a huge amount of fruit once they're ten years or more old) Rather than let excess fruit rot you make things, (e.g. jams (jelly to you), preserves, dried fruit) from it for the 'off season' for when you don't have fresh ones available.
