Did you take a nandroid backup of the original ROM you were using?

If you want to go back to completely stock GB without root (where you will need to downgrade or use Gingerbreak to root again) you can find the flashable RUU here:

If you want an as close to stock as possible but with root pre-enabled use this (I can vouch that it is totally stable and usable) with nothing but root changed from the original build:
[ROM] Stock-rooted Gingerbread (2.36.405.8) and Seraphic custom 0.3 - xda-developers
(Flash with CWM Recovery)
If you do decide to go back to the stock RUU too btw please be reminded that even though you will be completely unbranded and stock you will still not be able to gain further OTA firmware while your using CWM recovery image.
