Backing up ROMs

Im trying to backup my android ZTE Warp using gooManager in Rom Installer. I was wondering is this will include every installed app. When I recover to my ROM Id like it to include every apk file ive installed on my phone. When I try to back it up I have to reboot into recovery but theres no option to back anything up, just to install or update ROMs, and even then theres a signature error for ROMs, I assume because its not stock. How do I remove the req for a sig, or how do I add the sig to a devs ROM
