Does the G2 have Car Mode, similar to what HTC does in Sense? If so, anybody got any screen shots they are willing to put up?

It does have a car mode. The trigger is just below the camera and to the right. The app is really plain though and not configurable.

It comes with two plates. Just slip it behind a case. The magnet is really strong and if I place it just right it can trigger the car mode.

Yes it does. At least it does for me. I'm using Nova Launcher. You can select an activity and create a shortcut to it. I've been thinking of trying the old car home that was fully customizable. It allowed you to change all of the buttons.
 
Cheers - currently using a HTC One X with the genuine HTC car dock - works really well and I do use it a lot. Contract due for renewal, so just checking my options out :)

Most of the car mode apps that I downloaded looked ok as a home screen, but once you went into the phone dialer, they went from landscape to the standard dialer in portrait mode.

I had to find the app. This is the google car home app that came out around the time of the Original Droid. It's a much better car home app. All buttons can be changed and moved. It even has color settings and bluetooth toggle so there is no need for the magnet trick!!

I just have the simple cradle from my Wilson Booster. I have a thin ebay incipio-style case on my phone, just because I like having that little protection against rubbing, but it works fine for me, holds about right, and secure enough for me.
