My favorite, which I'm using right now is GoLauncher HD for tablets (available at the Play store for free). There are others like ADW Launcher.

I guess you will have to try various ones to see what fits for you. The nice thing about Android is customization. :car:
 
I tried GO, crashed my tab repeatedly and made things work funky. Using Nova like on my s2 and love it. Been running stable since the day I installed it.
