Are you still running the stock CM7 kernel, or did you flash something else? I was quite happy with incredikernel, but I didn't overclock (currently I'm running the leak). The other big kernels out there are tiamat and InvisibleK IIRC.
Once you have a kernel figured out, try upping the speed until it becomes unstable, then go back a step. There is no universal max speed for overclocking. Some devices are stable up to 1.3MHz while others can't go above 1.1MHz. For speed, you want to turn the high setting as high as you can get it to stay stable.
