Root Blank SDcard for backup/restore

Can I insert a New/Blank SDcard and do a backup/restore from recovery?

You need to have the folder from the old SD card to be able to restore an older nandroid. You could put a fresh card in and do a new backup and restore from that if needed.

I'm just looking to do New backup/restore.

Not restore.

Just looking to protect phone in current state.

Can I do THAT using the blank SDcard?

Yeah, just don't take the SD card out without turning the phone off or unmounting the card.
